Kids' Recipe: AB&J Sushi Rolls

girl wearing an oven mitt presenting susi rollsParents, here's a healthy, fun twist on a PB&J sandwich. Check out these AB&J Sushi Rolls from Chef Lizzie's FIT kitchen. They taste great, look cool, and they're easy to make, so have the kids help!

INGREDIENTS:

1 slice whole-grain bread

1 spoonful almond butter (Chef Lizzie likes to use the all-natural kind.)

1 spoonful 100% fruit jam (no added sugar)

PREP:

Place the bread on a cutting board. Cut off the bread crusts, and roll it flat with a rolling pin.

Spread a thin layer of almond butter onto bread, then a thin layer of jam.

Take the long edge of the bread and roll it up. Cut the roll into 4 bite-size pieces, like sushi.

SERVE:

Serve these AB&J Sushi Rolls with sliced apples, round carrot slices, or sugar snap peas and extra almond butter as a dip.

YIELD:

1 serving
